Creamy pumpkin and sweet potato soup

As the cold weather now starts to hit, it is the perfect time to warm ourselves up with soup! This recipe will fill you with joy! One mouthful will have you dreaming of cozy winter days in front of the fire. 

INGREDIENTS

  • 1/4 cup olive oil 
  • 1 brown onion 
  • 1 Tbsp ginger 
  • 1 Tbsp garlic 
  • 1 medium sized butternut pumpkin 
  • 1 large sweet potato 
  • 2 carrots
  • 1 litre of chicken stock (or vegetable stock)
  • 1/2 cup of Hemp Seeds
  • Pinch of salt and pepper
  • 200ml full cream (or coconut milk)
  • 1/4 cup of Hemp Oil 

METHOD
In a large pot on medium heat add the oil and fry off the onion, ginger, and garlic. Whilst frying, cut up the pumpkin, sweet potato, and carrots into small pieces. Add to the saucepan along with the stock, hemp seeds, salt, and pepper. Stir before placing the lid on to let it simmer for 25 minutes. Turn the heat off and let it cool for 5 minutes. Using a handheld or normal blender, blend the mixture until smoothie and creamy. Lastly, stir in the cream and hemp oil. Viola! Ready to serve.
