1 cup oats
1/2 cup whole wheat flour
1/4 cup all-purpose white flour
1/4 cup Australian Primary Hemp Boost
1/2 tsp baking soda
1/2 cup brown sugar
1/4 cup coconut sugar
1/4 cup melted plant-butter
1 cup vegan buttermylk (Plant mylk with added 1tbsp lemon juice to one cup of milk; let stand for 5 mins so it has time to curdle)
1 tsp baking powder
1/2 tsp salt
1 flax egg
1 cup blueberries

Soak oats in buttermylk and set aside. Add all dry ingredients together and whisk to break any lumps. Add egg, butter and vanilla to oats then fold gently into dry mix till just combined - fold in blueberries and add to muffin pan and sprinkle with coconut sugar and cinnamon as desired. Bake at 200 degrees for about 15-20 mins.
