Recipe 1 cup oats1/2 cup whole wheat flour1/4 cup all-purpose white flour1/4 cup Australian Primary Hemp Boost1/2 tsp baking soda1/2 cup brown sugar1/4 cup coconut sugar1/4 cup melted plant-butter1 cup vegan buttermylk (Plant mylk with added 1tbsp lemon juice to one cup of milk; let stand for 5 mins so it has time to curdle)1 tsp baking powder1/2 tsp salt1 flax egg1 cup blueberriesMethodSoak oats in buttermylk and set aside. Add all dry ingredients together and whisk to break any lumps. Add egg, butter and vanilla to oats then fold gently into dry mix till just combined - fold in blueberries and add to muffin pan and sprinkle with coconut sugar and cinnamon as desired. Bake at 200 degrees for about 15-20 mins.
