Hemp and Mushroom Ravioli

Now that winter has arrived it is time to cuddle up in front of the fire and enjoy a big bowl of pasta! But not just any pasta… we have created the most delicious hemp ravioli recipe for you that is completed with a hemp and mushroom filling. Yum, yum, yum! 


INGREDIENTS

Pasta:

Filling: 

  • 1 Tbsp butter
  • 2 medium sized porcini mushrooms (finely chopped)
  • 1 cup white mushrooms (finely chopped)
  • ½ onion (finely chopped)
  • 2 garlic cloves (grated)
  • 1 Tbsp chopped parsley 
  • ½ tsp oregano 
  • 1 ½ Tbsp grated parmesan 
  • 2 Tbsp cream 
  • 2 Tbsp ricotta 
  • ¼ cup Hemp Seeds

Sauce: 

  • 4 Tbsp butter 
  • ¼ cup chopped parsley 
  • 4 white mushrooms (sliced)
  • Fresh parmesan 

INSTRUCTIONS

  1. Add all the ingredients for the pasta into a bowl and knead until a soft dough forms. Set aside for 30 minutes. 
  2. Over medium heat, add the butter, mushrooms, onion, and garlic into a pan and fry until soft. 
  3. Place the contents of the pan into a blender and add the parsley, oregano, and parmesan. Blend on low until all ingredients are combined. 
  4. Pour the contents of the blender into a bowl and add the cream, ricotta, and hemp seeds. Stir to combine. 
  5. Now time for the fun part! Break the dough into 4 small pieces. One at a time, using some flour and a rolling pin, roll out the dough into a long rectangle. 
  6. With a knife lightly mark a line down the middle of the rectangle, then roughly 6cm apart mark lines along the other side. You should have roughly 12 boxes in front of you. 
  7. Grab a teaspoon of the filling and place it in between the two boxes. Until all the boxes along the rectangle are filled.

  8. Grab one side of the pasta sheet and fold it in half. Using a cup, cut out each ravioli piece in a semicircle. 
  9. Lastly, with a fork seal the edge of each ravioli. Repeat this process until all the dough and filling have been used. 
  10. Boil some water with a pinch of salt in a pot. When boiling add the ravioli and cook for 5 minutes. In a separate pan melt the butter for the sauce. 
  11. Once boiled, strain and add the ravioli to the melted butter along with the mushrooms. Cook for 2 minutes. 
  12. Serve immediately with a sprinkle of parsley and parmesan. Bon appetit!
