Mini Salmon Quiches

The perfect on the go snack for breakfast or lunch! These mini quiches definitely won't be lasting long. Jam packed with flavour and crunch, they are absolutely mouth watering! 

Recipe makes 12 quiches.

INGREDIENTS

  • 1 Tbsp olive oil
  • 1 bunch of spring onions, finely chopped
  • 1 Tbsp chopped parsley
  • 2 large eggs
  • 2/3 cup heavy cream
  • 1 tsp black pepper
  • 2 Tbsp Hemp Oil 
  • 2 sheets puff pastry
  • 120g cream cheese
  • 120g of salmon
  • 2 Tbsp Hemp Seeds
  • Fresh chopped dill (for garnish)
INSTRUCTIONS
  1. Preheat the oven to 160 degrees. 
  2. Heat the olive oil in a pan over medium heat. Add the finely chopped spring onion and parsley. Fry off. 
  3. In a bowl, add the eggs, cream, pepper and hemp oil. Whisk until combined. 
  4. Cut the puff pastry into squares and place into a cupcake tin. 
  5. Chop the cream cheese into small squares and the salmon into small pieces. 
  6. Add a teaspoon of the fried parsley and spring onions into each pastry filled cupcake tin. Secondly, add a few pieces of salmon and cream cheese blocks into each tin. Then fill to the top with the egg mixture. 
  7. Finally sprinkle the Hemp Seeds on top of each quiche. 
  8. Bake for 30 minutes at 160 degrees or until slightly brown. 
  9. Garnish with dill and enjoy! Best served warm.
