Roasted Quinoa Hemp Salad

Australian Primary Hemp seed salad


1 cup of Quinoa 

1 stock cube (vegetable, chicken or beef) 
 1 Large sweet potato 

1⁄2 Red Onion 

1 Can Chickpeas (washed and dried)

2 Chopped Tomatoes

Handful of chopped coriander 

1 cup of raw green beans 

Choice of added greens

Lemon dressing
1/4 cup Hemp Oil
Juice of 1 lemon 

Salt and pepper

For the salad

  1. Place quinoa and 1 and 1⁄2 cups of water with stock on the stove and boil until absorbed
  2. Cut sweet potato into 2 -3cm pieces, season with olive oil and smoked paprika and roast sweet potato in the oven on 180 degrees until brown
  3. Chop onion into slices and tomato into pieces
  4. Add remainder of the ingredients into a bowl and mix

For the dressing

  1. Combine 1⁄4 cup hemp oil, lemon juice and a pinch of salt and pepper

To assemble

  1. Add cooked quinoa and sweet potato to bowl and drizzle with dressing
  2. Serve with your favourite protein or on its own as a delicious lunch. Hemp seeds can also be sprinkled over the salad for that extra crunch
