Vegan Hemp Turmeric Muffins by @one_full_belly

Who knew Hemp and Turmeric could be such a delicious combination! 

These muffins aren't just tasty, but they are packed full of goodness to keep you healthy and strong!

Ingredients 

1 cup walnuts
1 cup rolled oats
2/3 cup buckwheat flour 
2 tbsp Australian Primary Hemp Protein
1 1/2 tsp baking powder
1/2 tsp baking soda
1 tbsp turmeric powder
1 tsp freshly ground cinnamon
½ tsp sea salt
2/3 cup Coconut yoghurt or plant-based mylk
1/3 cup Australian Primary Hemp Oil 
2 ripe bananas, mashed
5 fresh dates, mashed
Chia-eggs (3 tbsp chia seeds mixed with 9 tbsp water)
1 large handful blueberries (frozen or fresh)

Topping
1/3 cup rolled oats
2 tbsp coconut oil
1 tbsp coconut sugar

Method
Combine rolled oats and walnuts in a food processor and process to a flour type consistency.
Add to remaining dry ingredients. Place all wet ingredients apart from chia-eggs in a food processor and combine.
Add to the dry ingredients with chia-eggs and mix till just combined (don’t over-mix).
Fold in blueberries and place a large spoon mixture in prepared muffin tins.

Place spoonful of topping on top of each muffin – Bake for 20 minutes at 200 degrees.
